Gabriel first studied natural medicine in 1978, initially training in Shiatsu Therapy. In 1988 he completed four years of study in traditional Chinese medicine (TCM) and Acupuncture with instructors including Giovanni Maciocia and Peter Deadman, as well as a two-year program in European and North American Herbal Medicine. He went on to complete courses in Scientific Aromatherapy with Piérre Franchomme and Dr. Daniel Pénöel, and with the Natural Oils Research Association (NORA), under Professor Dietrich Wabner. Since 1990 he has been Principal of the Institute of Traditional Herbal Medicine and Aromatherapy (ITHMA), based at Regent's University London until 2020, and now located near San Francisco, California. Gabriel holds a Certificate of Education (CertEd) issued by the University of Wales, Cardiff.

In terms of ongoing training, Gabriel has pursued further studies in Clinical Aromatherapy principally with Rhiannon Lewis, and in Clinical Herbalism with Michael McIntyre, Peter Holmes, Joe Nasr, Julie Bruton-Seal, Andrew Chevallier, Kerry Bone, Chanchal Cabrera, Dr Jillian Stansbury, Jason Miller and Donald Yance, among others – as well as with Lisa Ganora through her advanced Herbal Constituents course.

In 1990 Gabriel founded the Register of Qualified Aromatherapists (RQA), and was the first Chairman of the UK Aromatherapy Organisations Council (AOC). In 1992 he organized an AOC conference in London entitled Essential Oils and Public Safety, at which experts on toxicology and the essential oil trade industry addressed issues of essential oil safety. The conference paved the way for the formation of the Aromatherapy Trade Council (ATC). He was also instrumental in the formation of the International Federation of Professional Aromatherapists (IFPA), launched at the UK parliamentary House of Lords in 2002, and served as its co-founding Chair, Publications Chair and Conference Chair until 2006, and again as Chairman of the Board of Trustees from 2016-2021.

Gabriel has given lecture presentations at international conferences hosted by the US National Association for Holistic Aromatherapy (NAHA), Alliance of International Aromatherapists (AIA), Pacific Institute of Aromatherapy (PIA), International Herb Symposium (IHS), Canadian Federation of Aromatherapists (CFA), Canadian Association of Aromatherapists (CAOA), Canadian Herb Conference, Tisserand Institute (UK/US), Czech Association of Aromatherapists, Essential Oil Resource Consultants (France), and International Clinical Aromatherapy Network (ICAN), of which he is a Fellow member. He has also given seminars in Japan, Korea, China, Hong Kong, Australia, Ireland, Brazil and Mexico.

Gabriel has contributed articles to journals including Aromatherapy Quarterly (UK), Positive Health (UK), NAHA Aromatherapy Journal (USA), Aromatic Thymes (USA), Aromatopia (Japan), Aromatika (Hungary), International Journal of Professional Holistic Aromatherapy (USA), and the International Journal of Clinical Aromatherapy (France), for which he served as Associate Editor from 2015-2020.

Gabriel is co-author of Shiatsu ~ the complete guide and author of Aromatherapy for Healing the Spirit. The latter book outlines a systematic approach to utilizing the psychological benefits of essential oils according to the body-mind relationships of Oriental medicine, and has been translated into several different languages.
